Loaded Potato Chips are one of the best appetizer or side dish recipes that literally everyone loves! Just like regular loaded potatoes, potato wedges are topped with melted cheese, bacon, and chives or green onions. You can eat them like french fries with your hands and dip them in sour cream. Start by placing tin foil on top of a large baking tray. Prepare the chips with nonstick spray. Cut the potatoes into 1/2 -3/4 thick slices. Next, melt some butter and spread it generously on each slice. After the butter, season the potatoes with salt and pepper. If you prefer extra seasoning, you can also add Italian seasoning. However, I find salt and pepper to be perfect! Bake the potato slices for 30 minutes. Finally, sprinkle each potato slice with shredded cheese, cooked bacon crumbs, and chopped chives or green onions. Return the loaded potato chips to the oven for an additional 5 minutes to allow the cheese to melt. Serve immediately with sour cream and/or ranch dressing for dipping.
